Tarator Sauce

Tarator is a nutty sauce that can be made with other nuts such as almonds, pinenuts or hazelnuts.

 

Ingredients

  • 1 sandwich slice bread
  • 3 tablespoons water
  • 70g fresh NZ walnuts
  • 1-2 cloves garlic, crushed
  • 1/3 - 1/2 cup extra virgin olive oil
  • 1 tablespoon lemon juice
  • sea salt and freshly ground black pepper to taste

Method

Place the bread in the bowl of a food processor and pulse until crumbs.  Add water, walnuts, a sprinkle of sea salt and garlic and pulse until finely chopped.   With the motor running drizzle in the oil and lemon juice until the sauce is creamy.   Taste and add extra salt and ground pepper as needed.

Serve tarator with pan fried fish, chicken or vegetables.
