Ingredients

• 8 medium vine ripened tomatoes, chopped
• 1 tablespoon finely chopped red onion
• 1 red chilli, finely chopped
• 2 tablespoons fresh lime juice
• 2 tablespoons chopped coriander
• 1 tablespoon olive oil
• 1 teaspoon honey
• salt and freshly ground black pepper

Method

Combine first 7 ingredients in a bowl and season to taste with salt and freshly ground black pepper
