Crunchy Vegan Chocolate Mousse Pots

These are completely delicious and I promise you no one will guess that there is avocado in the filling.  As long as you use barely ripe avocados then you will get a lovely creamy texture but no noticeable avocado flavour.

Yield: 6

Ingredients

  • 1 cup dried dates
  • 1/2 cup almonds
  • 2 barely ripe medium to large avocados
  • 1/2 cup cacoa powder (or Dutch processed cocoa)
  • 1/3 cup maple syrup
  • 1/2 cup almond milk
  • 2 tablespoons coconut oil, melted
  • 1 teaspoon vanilla extract
  • berries to serve

Method

Place the dates and almonds into the bowl of a food processor and pulse until finely chopped. Distribute the date and almond mixture between 6 glasses, press firmly and then set aside. Place the avocados, cacao, almond milk, maple syrup and vanilla into the food processor and process until smooth. Divide the mixture between the glasses and then refrigerate for at least 2 hours. Top with berries to serve.
