Yoghurt, Bacon and Herb Stuffing for Chicken

Yield: stuffing for 1 size 16 chicken

Ingredients

  • 1 medium sized onion, finely chopped
  • 1 clove garlic, finely chopped
  • 1 slice streaky bacon, chopped
  • 1 tablespoon olive oil
  • 2 tablespoons chopped mixed fresh herbs eg parsley, thyme, sage, marjoram, rosemary
  • finely grated rind of 1 small sized lemon (or 1/2 a larger lemon)
  • 1 1/2 cups fresh breadcrumbs (I use a light grain bread)
  • salt and freshly ground black pepper
  • 1/3 cup natural yoghurt

Method

Gently cook onion, garlic and bacon in the oil in a frying pan until onion is tender.  Transfer  mixture to a bowl and mix with herbs, lemon rind, breadcrumbs and a generous sprinkle of salt and pepper. Add enough yoghurt to bind but don't make the mixture too wet.
Stuff the chicken just prior to cooking.
I recommend cooking a chicken at 180 C for 90 minutes, turning every 30 minutes.
