Courgette Loaf

Ingredients

  • 3 eggs
  • 2 cups caster sugar
  • 3 teaspoons vanilla essence
  • 1 cup oil
  • 2 cups grated zucchini
  • 3 cups plain four
  • 1/4 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tsp baking soda
  • 3 teaspoons cinnamon
  • 1 cup roughly chopped walnuts

 

Method

Preheat oven to 180 C. Beat eggs until light and fluffy.Add caster sugar, vanilla and oil. Beat until very thick and fluffy. Fold in carefully zucchini. Sift together four, baking powder, salt, baking soda and cinnamon. Fold into mixture with chopped walnuts, or half a cup of walnuts and half a cup of sunflower seeds. Bake in 2 greased loaf tins at 180 C for 1 1/2 hours.
