Melita made this stunning cake for Jeremy’s 15th Birthday – lucky him!
This recipe is adapted from the Edmond’s Cookbook Banana Cake
Edmonds Banana Cake with Peanut Butter Cream Cheese Frosting
Ingredients
125g Unsalted Butter, softened
3/4 c Sugar
2 Eggs
2-3 Mashed Banana
1 tsp Baking Soda
2 tbls Hot Milk
2 c Flour ( I use self raising flour)
1 tsp Baking Powder
Method
Pre-heat oven to 180c, grease and line with baking paper the bottom of 3 6″ baking tins.
Cream butter and sugar until light and fluffy. Add eggs one at a time, beating well after each addition.
Add mashed banana mix well. Dissolve baking soda into hot milk and add to creamed mixture stir well.
Sift flour and baking powder. Fold into mixture.
Put mixture into cake tin and bake for about 20 minutes or until cake springs back when lightly touched.
When ready leave in tin to cool for 10 minutes before turning onto a wire rack.
When cool, cut the cakes horizontally in half so you will have 6 layers.
Frost each layer with peanut butter frosting and place each layer on top of the other.
Frost the sides and decorate with wafers and ferrero rocher chocolates on the top.
Peanut Butter Cream Cheese Frosting
100g Unsalted Butter
250g Cream Cheese
1/2c Peanut Butter
2c icing Sugar
Mix all together with a hand mixer till smooth.
