Ingredients
- 4 green aples peeled and sliced
- 2 cups frozen mixed berries
- 2 rhubarb stems, chopped into 2cm pieces
- 1/4 cup sugar
- 125g butter
- 1 cup brown sugar
- 3/4 cup flour
- 1 cup desiccated coconut
- 1 cup cornflakes
- 1 teaspoon ginger
- 1 teaspoon cinnamon
Method
Preheat oven to 180 C. Gently cook apples, berries and rhubarb with the sugar in a saucepan over a low heat. The berries will create lots of liquid so you shouldn't need to add any water as long as you cook over gentle heat. Allow to boil and cook until apple and rhubarb are just tender.
Spoon fruit into a baking dish, if you have an excess of liquid then you may like to hold some back but remember some will disappear during cooking.
Beat butter and sugar until pale and creamy. Mix in dry ingredients and mix well. Crumble topping evenly over the fruit.
Cook for 30 minutes or until topping is golden and firm.
