Date and Custard Tart

This delicious tart is one of my favourites.
serves 8


  • sweet shortcrust pastry
  • 1 cup cream
  • 1 cup milk
  • 1 vanilla pod, split
  • 2 tablespoons honey
  • 8 egg yolks
  • 1/4 cup sugar
  • 10 fresh dates


Preheat oven to 200 C.
Line a 26 cm flan pan with pastry, blind bake for 15 minutes until golden.
Remove pastry from oven and reduce heat to 150 C.
In a small saucepan heat together cream, milk, vanilla and honey until almost boiling. Remove from heat and allow to cool until warm.
Beat together egg yolks and sugar until pale and creamy, strain the warm cream mixture and pour into the egg yolks and mix well.
Chop dates into quarters and scatter over the pastry base, pour over the custard and bake for 30 – 40 minutes until custard is just set. Allow to cool before serving.
