500g currants
500g sultanas
450g raisins, chopped
360g mixed peel
6 large apples – leave skin on and grate
120g almonds, blanched and chopped
120g glace cherries, chopped
Rind and juice of two lemons
360g brown sugar
1 tsp salt
½ tsp ground cloves
1 ½ tsp ground allspice
2 tsp ground cinnamon
1 ½ tsp freshly grated nutmeg
6 bananas
225g butter
Brandy, sherry or rum to moisten
Combine all ingredients in a bowl – except for banana, butter and alcohol.
Peel and dice the bananas and fry quickly in a little butter – approx 5 mins stiring frequently. Remove from heat. Add remaining butter. Melt. Add this to mincemeat mixture and combine well. Moisten with alcohol as desired.
Store in a covered jar in the fridge for a limited time or freeze in plastic pottles with a secure lid.
This makes a delicious sauce for ice cream
