Best Banana Bread (version 2)

This is a modification on our Best Banana Bread recipe, it isn’t too different but rather than keep making changes I decided to create its own recipe.

  • Cook time: 1 hour 10 minutes

Ingredients

  • 3 medium sized ripe bananas
  • 125g butter, softened
  • just under 1 cup white sugar
  • 2 eggs
  • pinch of salt
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons baking soda
  • 1/2 cup unsweetened yoghurt
  • 1 1/2 cups flour

Method

Heat the oven to 150 C.
Place the bananas in a baking dish, prick with a sharp knife and place in the oven to bake for 20 minutes ¬†While this isn’t essential it does make a more intense banana flavoured loaf.
Line a 25cm loaf tin with baking paper.
Beat the butter and sugar together until light and fluffy.
Add the eggs, one at a time, beating well after each.
Carefully peel and mash the hot bananas and add to the mixture.
Sift the flour and salt and add to the bowl alternately with the baking soda dissolved in  yoghurt.
Bake for 30 minutes then increase heat to 175 C.
Bake another 35-40 minutes. Insert a skewer into centre to test for doneness.
The skewer should come out clear when the loaf is cooked.
Cool in the tin for 10 minutes before turning out onto a cake rack to cool completely.
