Preheat oven to 150c
For each 2 egg whites add 6 tablespoons castor sugar and a pinch of salt.Beat whites until really stiff and then very slowly add the sugar until completly dissolved, lastly the pinch of salt.
Place in dessertspoon lots on cold tray, ( I make mine about the size of a small manderin) and place in the oven. Turn oven off, and leave for at least 2 hours, I often make mine in the evening and leave in the oven overnight.
