- 2 cups flour
- 4 teaspoons baking powder
- pinch of salt
- 1/2 cup caster sugar
- 1 egg , lightly whisked
- 1 cup milk
- 50g butter, melted
- 1 cup frozen raspberries
- 1/2 cup dark chocolate pieces
Preheat oven to 200 C. Sift the flour, baking powder, salt and sugar into a bowl.
Lightly whisk egg and combine with milk and butter.
Pour the liquid along with the raspberries and dark chocolate into the dry ingredients and mix very gently just to combine.
Spoon into greased muffin tins and bake for 10-15 minutes until muffins spring back when gently pressed.
