Makes 10-12 fritters.
Ingredients
- 1/2 cup flour
- 1 teaspoon baking powder
- 2 teaspoons cumin
- 2 teaspoons thyme (dried)
- 1/4 teaspoon salt
- 1 egg
- 1/2 cup milk
- 2 spring onions, diced
- 2 cups (250 g) corn kernels
- 50 g cheddar cheese, grated
Method
In a bowl, mix together the flour, baking powder, cumin, thyme and salt.
In a separate bowl, beat the egg well.
Add the egg to the dry mixture and gradually add the milk, stirring constantly to avoid lumps.
Add spring onion, corn kernels and cheese, and stir to mix.
Grease an electric frypan (set to a medium heat setting, which is 5-6 on my frypan) with a smear of butter or oil and cook spoonfuls of mixture, allowing six minutes for each side.
