Corn and Spring Onion Fritters

Serve these fritters with sliced avocado,sour cream, chilli sauce and bacon.
Makes 6 large fritters


  • 2 cups corn kernels (can used canned or frozen)
  • 3 spring onions, finely chopped
  • 2 eggs, separated
  • 1/2 cup self raising flour
  • 1/2 teaspoon baking soda
  • 2 tbsp milk
  • salt and freshly ground black pepper
  • 25g butter


Mix together corn and spring onions. Mix egg yolks into the corn and then flour and baking soda dissolved in milk. Beat egg whites until soft peaks and fold into the corn mixture. Heat butter in a frying pan utnil sizzling and cook 1/4 cupfuls of mixture until golden on both sides.

  1. These fritters are lovely and light and fluffy but, for some reason, I cannot see the stars to rate them. I would give them 5/5 if I could!
