Anzac Slice

Ingredients

  • 1 cup rolled oats
  • 1 cup plain flour
  • 1/2 teaspoon mixed spice
  • 1 cup brown sugar, firmly packed
  • 1/2 cup desiccated coconut
  • 125 g butter, chopped
  • 2 tablespoons golden syrup
  • 2 tablespoons water
  • 1/2 teaspoon baking soda

Method

Preheat oven to 160 C. Combine oats, sifted flour, mixed spice, sugar and coconut in a large bowl. Mix well.
Combine butter, golden syrup and water in a medium pot; stir over low heat, without boiling, until butter is melted. Bring to boil, remove from heat and stir in soda.
Add syrup mixture to dry ingredients and mix well.
Grease 20 x 30 cm slice tin; line base and two opposite sides with baking paper, extending paper by 5 cms over edge of tin. Press out mixture into tin.
Cook for 35 minutes. Cool slice in tin for 5 minutes; transfer to a wire rack to cool.
Cut slice into squares

  1. This is a nice chewy slice, I added dried apricots to the butter/golden syrup mix and drizzled melted chocolate over the top :) YUM
