Serve warm or cold. Makes 12 good sized muffins.

Sometimes when I want a change, I decrease the bran by 1/2 cup and add 1/2 cup coconut instead.

Ingredients

  • 1 cup plain white flour
  • 1 teaspoon baking powder
  • 3 tablespoons cocoa
  • 1/2 teaspoon salt
  • 1/4 cup white sugar
  • 1 1/2 cups bran flakes
  • 1 tablespoon golden syrup
  • 1 tablespoon butter
  • 1 teaspoon baking soda
  • 1 cup milk
  • 1 egg
  • 1 cup frozen blueberries
  • 1/2 cup chocolate chips

Method

Preheat oven to 220 C.
Sift the flour, baking powder, cocoa and salt into a large bowl.
Stir in the sugar and bran flakes.
Melt the butter and golden syrup together and set aside.
Dissolve baking soda in the milk and stir into golden syrup mixture.
Add the golden syrup mixture to the dry ingredients.
Add the lightly beaten egg then mix just to moisten the ingredients.
Fold in blueberries and chocolate chips.
Spoon mixture into greased muffin tins.
Bake for 12 minutes or until muffins spring back when lightly pressed.
