Blueberry Breakfast Pikelets

Alfreshco Butteroil promotion


  • 1 egg
  • 1 tablespoon sugar
  • 3/4 cup milk
  • 1 cup plain flour
  • 1 teaspoon baking powder
  • pinch of salt
  • 1 tablespoon golden syrup, warmed
  • 1 tablespoon Alfreshco Original Butteroil blend
  • 3/4 cup blueberries, fresh or frozen


Whisk egg and sugar together until pale and creamy. Add milk alternately with sifted dry ingredients. Mix in the golden syrup and Butteroil ensuring that the mixture is smooth.
Fold through blueberries. Cook in large spoonfuls in a hot frypan greased with Alfreshco Butteroil.
Turn pikelets once bubbles appear on the surface and start to pop.
Serve warm with maple syrup and sliced banana
