Ski Cake – Nikki Sutton

Nikki made this spectacular cake for her friend Chris who is of course an avid skiier. After making it the cake then needed to endure an hour in the cake over gravel roads and survived the journey well.

Nikki’s favourite celebration cake recipe is one her friends fondly call the “crack cocaine cake,” one bite and you are addicted!

Banana, Baileys and White Chocolate Cake

1 1/2 cups sugar
250g butter
3 eggs
2 cups flour
1/2 teaspoon baking powder
1 large banana, mashed
1/2 cup (125ml) Baileys liqueur
1 1/2 cups white chocolate pieces (about 1.5cm big)

Preheat oven to 180 C, grease and line a 22cm cake tin.
Beat butter and sugar until pale and creamy.
Add eggs one at a time, beating well after each addition.
Beat in banana and Baileys.
Mix in combined sifted flour and baking powder and then fold in the white chocolate.
Spoon batter into prepared cake tin and bake for 1 hour or until cake tests cooked.

  1. Hi Helen have you been able to find some cupcake or muffins papers that dont stick I find with most of the fancy ones the cake does not come away cleanly

    • Hi Kay, yes I completely agree and it is something that is very frustrating when cases look lovely but things stick.
      Sprink is a very good oil spray for coating tins and paper cases to make them nonstick.
