Ingredients
- 250g Lentilles du Puy
- 1 red onion
- Extra virgin olive oil
- Truffle infused olive oil
- 4 Chicken thigh fillets cut into strips
Method
Cook Lentils in a saucepan of water for 20 minutes or until tender. Heat a little olive oil in a pan and cook onion until tender, stir through the cooked lentils and transfer to a serving bowl.
Meanwhile BBQ chicken until cooked through, place over the lentils and drizzle with a little truffle infused olive oil.
