Ingredients
- 2 cups water
- 1 cup sugar
- 1 tablespoon butter
- 500g dried fruit (I use sultanas and apricots)
- 2 1/2 cups flour
- 1/2 teaspoon cinnamon
- 1/2 teaspoon mixed spice
- 2 teaspoons baking soda
- 1/2 cup chopped walnuts
Method
Preheat oven to 160 C.
Place water, sugar, butter, dried fruit in a saucepan and bring to the boil, boil for 5 minutes. Remove from heat and when cool add remaining ingredients and mix well.
Pour into a greased loaf pan and bake for 1 hour or until loaf tests cooked.
