rhubarb sauce

  • 1 kg rhubarb
  • 500g onions
  • 250g sugar
  • 500g chopped dates or raisins
  • 1.2 litres vinegar
  • 1 teaspoon ground cloves
  • 1/2 teaspoon cayenne pepper
  • 1 tablespoon salt


Chop rhubarb and onion and place in a large pan, add remaining ingredients and bring to the boil. Gently boil for 1 hour, strain and pour into sterlised bottles.
