I normally leave the small to medium berries whole, halve those that you think need it.
- 1 kg strawberries,washed & hulled
- 1 kg sugar
Place strawberries in a large plastic or glass bowl and sprinkle with the sugar, leave overnight. Place fruit and sugar into a large pan (mixture will froth) and quickly bring to the boil. Boil rapidly for 15-20 minutes and then pour into sterlised jars. Seal when cool.
