I have testd this recipe and made changes that I thought were needed. Helen
Ingredients
- 400 g butter
- 3 cups sugar
- 2 teaspoons vanilla
- 4 eggs
- 2 cups mashed banana
- 4 cups flour
- 1/2 cup cocoa
- 2 teaspoons baking powder
- 1 1/2 teaspoons baking soda
- 1 3/4 cups milk
- 2 teaspoons vinegar
Method
Preheat oven to 180 C. Beat butter and sugar until pale and creamy. Add vanilla and beat in eggs one at a time. Add mashed banana and then combined flour, cocoa and baking powder. Gently mix in baking soda dissolved in the milk and also the vinegar. Pour into a 30 cm cake pan and bake for 1 hour until the cake tests cooked. You may need to cover the cake for the last 10 minutes or so of cooking if it browns too quickly.
This is an excellent cake – made it in a roasting pan!
