2 cups flour
1/4 cup sugar
125g butter, chilled and chopped into small cubes
1-2 tablespoons chilled water
1/3 quantity Christmas fruit mince – see recipe here

Place flour and sugar in the bowl of a food processor, with the motor running drop butter in a little at a time and process until the mixture is crumbly. Add egg and pulse, adding a little water until the mixture just comes together into a ball. Wrap dough in plastic clingfilm and refrigerate for 30 minutes or longer.
Preheat the oven to 200 C.
Roll out pastry to a thickness of 2 cm. Cut out 8 cm circles with a cookie cutter and press them into mini muffin pans. Spoon fruit mince into the pans and then either cover with a circle of pastry or cut pastry into star shapes.
Bake for 15 minutes until golden.
Dust with icing sugar once cool.
