Chocolate Chip Muesli Bars

Method

Ingredients

  • 1 ½ cups toasted muesli
  • 2 ½ cups rice bubbles
  • 1/3 cup shredded coconut
  • ¼ cup chopped nuts
  • 125g butter
  • 1/3 cup honey
  • 1/3 cup peanut butter
  • ½ cup raw sugar
  • ¾ cup chocolate chips

 

Method

Lightly grease a 20 x 30cm slice tin. Combine muesli, rice bubbles, coconut and
nuts in a bowl. Place butter, honey, peanut butter and sugar in a saucepan,
stir over heat until butter is melted and sugar dissolved. Bring to the
boil and then simmer for 5 minutes. Stir honey mixture into dry ingredients
and mix well. Press into tin and sprinkle with chocolate chips. Cut into
bars when cool.
