Ingredients
- 1/2 onion, finely chopped
- 1 stick celery, finely sliced
- 1 carrot, finely chopped
- 1 clove garlic, finely chopped
- 2 tablespoons olive oil
- 400g beef mince
- 4 rashers streaky bacon
- 2 teaspoons flour
- salt and freshly ground black pepper
- 1 cup tomato juice
- 400g tin tomatoes in juice
- 1 tablespoon tomato paste
- 1 sprig thyme
- 1 bay leaf
Method
Cook onion, celery, carrot and garlic in olive oil until softened. Add mince and bacon and fry until meat browns and breaks up into small lumps. Sprinkle in flour, stir to combine and add salt and freshly ground black pepper. Add 1 cup water, tomato juice, tomatoes, tomato paste and thyme. Bring to the boil and then simmer for 1 hour.
Add a little extra water if needed
