Ingredients
- 1 cup blueberries
- 1 cup cream
- 1 tablespoon icing sugar
- 1 teaspoon vanilla extract
- 1 pack Bazaar Plain Bagels
- ½ cup lemon curd
- extra blueberries to garnish
Method
1. Place the blueberries in the bowl of a food processor or blender and pulse until roughly chopped.
2. In a small bowl whip together the cream, icing sugar and vanilla. Fold through the blueberries.
3. Split the bagels in half and toast until golden. Spread bagels with lemon curd and top with a spoonful of blueberry whip and extra blueberries.
