Ingredients
- 500 g premium beef mince
- 100 g fresh breadcrumbs
- 1 tablespoon each of: tomato sauce, Worcestershire sauce
- 1 egg
- 1/2 cup beef stock
- 1 tablespoon chopped fresh herbs (rosemary, parsley, oregano)
- salt and freshly ground pepper
- 6 rashers streaky bacon
Method
Preheat oven to 180 C.
Mix together mince, bread crumbs, tomato sauce, Worcestershire sauce, egg, beef stock and salt and freshly ground black pepper.
Line 6 muffin cups with a bacon rasher and fill will a mound of beef mix. Fold the bacon over the top of each mound.
Bake for 35 minutes.
Serve slightly warm or cold with bread, cheese and pickles for a delicious lunch.
Serves 6 as a lunch or light meal
I was looking for a recipe using mince that I could quickly throw together and cook, rather than having to peel and dice vegetables, brown onion and mince etc. This one fitted the bill perfectly as I had bacon on hand. It was so easy to put together and the flavour was beautiful. My husband also commented on how flavoursome it was. Thank you for a great recipe Helen.
