Oat Biscuits

Yield: Makes 25 biscuits

Ingredients

  • 225g flour (8 oz) flour
  • 110g (4 oz) cold butter, roughly chopped
  • 1/2 cup (125g or 4.4oz) sugar
  • 110g (4 oz) rolled oats
  • 1 teaspoon baking powder
  • 1 tablespoon honey
  • 1 egg, lightly whisked
  • 1/4 cup milk

Method

Preheat the oven to 170 C (340 F).
Place the flour into the bowl of a food processor, with the motor running drop the butter into the flour until the mixture resembles fine crumbs.
Add the sugar, oats and baking powder and pulse to combine.
Drizzle in the honey and the combined egg and milk. Pulse until the mixture comes together into a ball.
Roll the dough out on a lightly floured bench to approximately 3mm thick.
Cut into circles with a cookie cutter and place on a cold lined tray.
Bake for 15 minutes or until lightly golden.
Cool on a wire rack and transfer to an airtight container once cold.
