Quick Steamed Pudding

I make this recipe often and it always disappears real fast

Ingredients

  • 1 tablspoon butter
  • 1 tablespoon golden syrup
  • 1-2 tablespoons dried fruit
  • 3 tablespoons flour
  • 1 tablespoon sugar
  • 2 teaspoons baking powder

 

 

Method

Place a large saucepan of water on to boil. Grease a pudding basin (preferably stainless steel).
Put butter, golden syrup, and dried fruit in basin and stand basin in saucepan to heat.

Mix flour, sugar and baking powder. Mix with water until the consistency of pikelet batter and pour contents into basin over fruit mixture.

Do not cover basin but place lid on saucepan and boil for 20 minutes.

Turn out on plate and serve with whipped cream or ice cream (or both).

  1. This does produce a perfectly adequate steamed pudding but the quantities are fairly ridiculous and I wouldn’t bother again.
