Ingredients
- 500g brussels sprouts
- 2 red onions
- 3 tablespoons olive oil
- Tahini yoghurt dresssing (see recipe link below)
Method
Preheat the oven to 200 C.
Remove any tough outer leaves from the brussels sprouts, halve and remove the stem.
Chop red onion into quarters and then in half again.
Arrange the brussels sprouts and onion in a roasting dish, drizzle with olive oil and toss to coat. Season with salt and freshly ground black pepper.
Roast for 30-40 minutes until the edges are crisp and golden and the brussels sprouts are just tender.
Arrange on a platter and serve drizzled with tahini yoghurt dressing.
