Ingredients
- 1/4 cup flat leaf parsley
- 1/4 cup mint leaves
- 1/4 cup basil leaves
- 2 tablespoons capers, drained
- 6 anchovy fillets in oil, drained
- 2 cloves garlic
- I slice good white bread, crusts removed
- 1-2 tablespoons red wine vinegar
- 1/2 cup extra virgin olive oil
Method
Place all ingredients except oil in the food processor and process until finely chopped and combined. With the motor running pour in the oil until you have a thick sauce.
Store in a sealed container in the fridge until required.
