Left over cooking liquid can be frozen and used again at a later date.
Ingredients
- 1 cup soy sauce
- 1 cup rice wine (or sherry)
- 1 cup water
- 1 cup chicken stock
- 1/2 cup sugar
- 2 star anise
- 1.6 kg chicken
Method
Place all ingredients in a slow cooker and cook on high for 5 hours, turning the chicken over half way through cooking.

I made this 4 1/2 cup chicken in the slow cooker, and can thoroughly recommend it. I think it needs turning half way, not for cooking reasons but to allow the lovely colour and flavours of the sauce cover both sides.
Enough sauce left over for another time, which is great. I will be making this again
With my first crock pot the instructions were to place a sheet of tin foil under the lid shiny side down.
I only forgot once and did notice a difference.
If this was done with this recipe you probably wouldn’t need to turn the chicken as the foil makes the heat more even.
