Smoked Chicken and Celery Salad with Honey and Mustard Yoghurt Dressing

Ingredients

  • 3 stalks celery
  • 600g smoked chicken
  • 300g grapes
  • 2 red capsicums
  • 3-4 spring onions
  • 1 telegraph cucumber
  • 1 cup plain unsweetened yoghurt
  • 1/2 cup mayonnaise
  • 1 tablespoon wholegrain mustard
  • 1 tablespoon honey
  • 2 teaspoons, lemon juice
  • 1 tablespoon finely chopped fresh parsley
  • salt and freshly ground black pepper to taste

Method

Wash celery sticks and slice into 1cm pieces on the diagonal. Remove skin and dice chicken into small cubes or slices. Halve the grapes and remove any seeds. De-seed and finely slice the capsicum. Slice spring onions on the diagonal. Remove seeds from cucumber and slice into half rounds.
Make the dressing by mixing the yoghurt, mayonnaise, mustard, honey and lemon juice in a small bowl or jug. Mix in parsley and season to taste.
In a large salad bowl, combine all the ingredients. Pour over the dressing and mix together well.
Serve chilled on a salad platter or individual salad bowls garnished with extra spring onions.
