Fran says “This cake was made for my friend’s little girl Grace’s 4th Birthday. Her mum could not make the birthday cake as she was busy with a brand new baby.
The cake theme is ‘Walt Disney’s’ new movie ‘Frozen’ which I haven’t seen myself but I have heard very good reviews. The birthday girl was absolutely blown away!”
My children are very envious that we don’t have a friend like Fran.

Bottom cake is 2 layers vanilla cake from ‘Egmonds Cookbook’
Middle layer chocolate mudcake a recipe I created myself.
The top tier is chocolate mudcake with chocolate ganache.
Mudcake:
Melt together
250g dark chocolate
1 cup (250ml) strong hot coffee
1/2 cup vegetable oil
2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 cup cocoa powder
1 cup buttermilk
2 eggs
Melt together the chocolate, coffee and vegetable oil.
In a large bowl sift the dry ingredients and then mix in the buttermilk and eggs. Lastly mix in the cooled chocolate mixture.
Pour into a lined 24cm cake tin and bake at 180 C for approximately 50 minutes or until cake tests cooked.
Chocolate ganache:
300gr dark chocolate
75gr butter
100ml milk
Melt together and let cool.
Spread around cake and/or make a filling with it.
I think fran is sooooo talented. I would love a cake like that.
