These are so easy but delicious, and they freeze well too.
Ingredients
- 1/2 cup sugar
- 75 g butter
- 1 cup of chopped dates
- 2 cups rice bubbles
- 1/2 cup coconut.
Method
Slowly heat sugar and butter in a saucepan over a gentle heat. Add choped dates and stir and mash with a potato masher until soft and pulpy. Remove from heat and add rice bubbles. Roll into small balls and dip into coconut.
Chill until firm.
