Ingredients

  • 1 cup brown rice, cooked
  • ¼ cup shredded cabbage
  • 2 sticks celery, chopped
  • 1 red apple, cut into pieces
  • 1 carrot, grated
  • ¼ cup sultanas
  • ½ cup mayonnaise
  • ¼ cup light sour cream
  • 1 teaspoon mustard
  • 1 loaf French bread

Method

Mix
together rice, cabbage, celery, apple, carrot and sultanas. In a separate
bowl mix mayonnaise, sour cream and mustard together and then toss through
coleslaw. Slice bread stick in half long ways and then spread coleslaw over
bread. Put halves back together and tightly plastic wrap. Refrigerate for
at least an hour.
