- 150g each of apricots,raisins,currents,sultanas,dried pineapple,candied peel
- 100g glace cherries
- 3 grated apples
- finely grated rind and juice of 1/2 lemon
- 1 tsp almond essence
- 200g brown sugar
- 2 tsp cinnamon
- 1 tsp ground nutmeg
- 1 tsp ground coriander
- 6 Tbsp rum or brandy or 4 Tbsp orange liqueur
Mince the apricots,raisins,sultanas and dried pineapple
Mix the minced fruit with all the remaining ingredients.
If keeping,bottle and seal the mince in sterilised jars,or freeze it.
The flavour will improve if made well ahead.A generous dash of spirits adds to it's keeping qualities.
