Ingredients
- 1 size 16 chicken
- 1 cup soy sauce
- 1 cup rice wine
- 1 cup chicken stock
- 1 cup water
- 1/2 cup sugar
- 2 star anise
Method
Place all ingredients in a large saucepan. Cover and simmer over a moderate heat for 1 hour, turning the chicken half way through cooking.
Remove from the heat and allow to stand a further 15 minutes. Lift meat from broth, slice and serve with steamed rice, greens and a ladle full of broth.
Left over cooking liquid can be frozen to use again with either chicken or fish.

The girls have bein in the sink for 4 hours now, (we own a party hire and roast shop) I need to feed them. Chicken in the fridge, Tony Murrells (sp) favourite receipe to impress comes to mind, Helen Jacksons 4 1/2 cup chicken. The girls are Fijian and Tanzaian and a couple of us kiwis, scrumpy. The reward for the simplicity of the receipe is so pleasing. Well done YOU
Hi, Sorry stupid question but Do you cook this for 1 hour each side or 30min each side ?
This is now a firm family favourite – so very easy and the most moreish tasting dish around – I use less sugar and its still the best
I found this a little sweet so next time will try with only 1/4 cup of sugar. I added afew thick slices of ginger as well, which was delicious. Pretty tasty though, and very easy! I also poached a chicken breast in some of the left-over liquid that I had frozen.

I forgot the rice wine and did use all of the other ingredients but did cook it in the crockpot EVERYBODY loved this and kids even asked for seconds, was served on rice with steamed veg and extra “sauce” spooned over mmmmmmmmmm
Normally I roast my chicken. This recipe is a real change of
flavours. I must try sometime.

Hi Helen, re 41/2 cup chicken recipe – a couple of queries – where would I buy rice wine, and also, do you think this would work in a slow cooker? If so, how long do you think you’d cook it the slow method?

rice wine is in most supermarkets – ask if you can’t find it as it shoudl be near vinegars with Asian ingredients or perhaps around sushi ingredients.
We have a separate recipe on foodlovers for 4 1/2 cup chicken in the slow cooker. It is perfect for slow cookers.
