I used to munch this around the markets in Firenze and was given it by a friend.
Ingredients
- 1 1/4 cups white sugar
- 2 cups plain flour
- 1/8 teaspoon baking soda
- 1/8 tsp salt
- 2 beaten eggs
- 1 tablespoon water
- 1 tablespoon butter at room temperature
- 1 teaspoon vanilla essence
- 1/4 teaspoon almond essence
- 3/4 cup whole unblanched almonds
Method
Preheat oven to 150C. Combine sugar, flour , soda and salt then beat in the eggs, water, butter, vanilla and almond extracts until just blended. Stir in the almonds and turn out onto a lightly floured board and roll into 2 logs about 5cm in diameter.
bake on greased and floured baking tray until golden about one hour and allow to cool.
With a lovely sharp knife (global) but on an angle about 1 cm wide and place back on the tray and back about 25 mins until brown and crunchy. Let cool and store.

Biscotti.
Made biscotti for the first time today and had a complete meltdown! The biscotti, I mean- not me. I made the almond biscotti recipe from here and just looked at it in the oven- it has spread flat on the baking tray. Was very sticky when I mixed it and shaped it into a log so my guess is that the mixture was too wet.
Any ideas?
