Apple and Cinnamon Cake

I hope you enjoy this cake it is from Hubbies Grandmothers hand written recipe book from 1910.




  • 125 g butter
  • 125 g sugar
  • 2 eggs, whisked
  • 125 g flour, sifted
  • 125 g cornflour
  • 1 teaspoon baking powder
  • 3 apples, grated
  • finely grated rind of 1 lemon
  • 2 tablespoons sugar


Preheat oven to 180 C
Beat together butter and sugar until pale and creamy. Add the eggs and mix well. Stir in combined sifted flours and baking powder. Spread 1/2 mixture in sponge pan. Top with combined apples, lemon and sugar. Spread remainder of mixture on top.
Cook in for about 1 hour or until cake tests cooked.
Ice top of cake when cold with a nice butter icing made with the juice of the lemon and 1 teaspoon of cinnamon.
