This cake is easy to make, always successful, cuts beautifully, feeds many, good warm with cream or custard for dessert or cold with tea or coffee. Tastes even better the next day.
Ingredients
- 2 cups sugar
- 2 teaspoons baking soda
- 3 cups flour
- 2 teaspoons cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 1/2 cup sultanas
- 1/2 cup walnut pieces
- 4 eggs, lightly beaten
- 4-5 apples, roughly chopped
- 250 g butter, melted
Method
Preheat oven to 150 C.
Sift the dry ingredients into large bowl, add all other ingredients except the butter and lightly mix.
Pour in the butter, mixing gradually. Do not overmix.
Pour into a lined 24cm round cake tin and bake until a skewer comes out clean – about 1 -1 1/2 hours.
Dust with icing sugar to serve.
Made this cake last night – very successfully. It looks impressive, tastes great and is perfect with a cup of tea mid afternoon or for dessert with yogurt or cream.
Tasted great, a very stiff mixture, I was surprised how tasty the cake was given the consistency before it was cooked. It was very popular with my guests
