Ingredients
- 125g butter
- 1 cup sugar
- 2 eggs
- 1 cup mashed ripe banana
- 250g flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon ground cinnamon
- 1/2 cup milk with 1 teaspoon lemon juice
Method
Butter and line a 20 cm cake tin.
Preheat oven to 180 C.
Beat butter and sugar until pale and creamy. Beat in eggs one at a time and then banana. Mix in sifted dried ingredients alternately with milk. Pour into prepared tin and bake for 45 minutes or until cake tests cooked.
Cool and then ice as desired.
