Caroline’s Vegan Chocolate Cake

Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 cups soft brown sugar
  • 2 teaspoons salt
  • 2 teaspoons ground ginger
  • 2 teaspoons ground cinnamon
  • 1/3 cup cocoa
  • 1 cup vegetable oil
  • 1 3/4 cups water
  • 2 teaspoons vanilla essence
  • 2 tablespoons vinegar

Method

Preheat oven to 170 C. Combine sifted dry ingredients in a bowl. Make a well in
the centre and add oil, water, vanilla and vinegar. Mix until a smooth batter.
Pour into a 20cm lined cake tin and bake for 1 hour or until cake tests
cooked.
