these muffins are delicious served with mushroom and blue cheese soup
Ingredients
- 2 cups flour
- 3 teaspoons baking powder
- 1 egg
- 1/4 cup oil
- 1 1/2 cups milk
- 2 cups roughly chopped mushrooms
- Salt & pepper to taste
- 1 cup grated tasty cheddar cheese
Method
Preheat oven to 200 C.
Mix all ingredients in a large bowl and spoon into well greased or non-stick deep muffin tins. Bake for 15-20 minutes until golden brown. Cool for a few minutes on a wire rack and serve warm with butter.
