- 1 chicken schntizel
- 1 teaspoon oil
- 2 slices Tip Top Goodness Grains Toast Bread
- 2 teaspoons aioli
- 1/2 tomato sliced
- small handful rocket or mesclun leaves
- salt and freshly ground black pepper
Brush a small frying pan with the oil and cook the schnitzel until golden on both sides and cooked through.
Spread bread with aioli, using a bit more if you like.
Place schnitzel on top of one bread slice, cover with tomato, leaves, season with salt and pepper and top with remaining bread slice.
