Chicken Schnitzel Sandwich

Ingredients

  • 1 chicken schntizel
  • 1 teaspoon oil
  • 2 slices Tip Top Goodness Grains Toast Bread
  • 2 teaspoons aioli
  • 1/2 tomato sliced
  • small handful rocket or mesclun leaves
  • salt and freshly ground black pepper

Method

Brush a small frying pan with the oil and cook the schnitzel until golden on both sides and cooked through.
Spread bread with aioli, using a bit more if you like.
Place schnitzel on top of one bread slice, cover with tomato, leaves, season with salt and pepper and top with remaining bread slice.
