Ingredients
- base
- 150g butter
- 1/2 cup sugar
- 1 1/2 cups flour
- 2 tablespoons cocoa
- pinch of salt
- 1/2 cup coconut
- 1 teaspoon baking powder
- topping
- 1 rounded cup icing sugar
- 50g butter, melted
- 2 teaspoons cocoa
- 1 cup coconut
- 1/3 tin sweetened condensed milk
- 1/2 teaspoon vanilla essence
Method
Preheat oven to 180 C
For the base, beat butter and sugar together until pale and creamy. Mix in dry ingredients and then press into a lined 20 x 30cm slice tin. Bake for 15 minutes.
Mix all topping ingredients together until well mixed and spread over the base while still warm.. Leave to sit for 10 minutes or so but cut while still warmish.
I’ve made that recipe for years but for the topping I put 65 gmes butter in a pot add 1 cup coconut,1 Tb cocoa, 1and half cups icing sugar vanilla and little water, bring to boil and pour over. Just cool a little then mark out squares and later when cold cut properly. I prefer this only beacuse of the condensed milk .

But we where after a sugar syrup recipe for the top of our profiteroles [chocolate eclaires] if you can email as one that would be great Thanks tina and kids.
