A very traditional sauce to serve with turkey. It is best made with bread that is 2-3 days stale, proving it is an economical sauce to make at Christmas. Bread sauce can be made the day before and heated through when required.
Ingredients
- 400ml (just over 1 1/2 cups) cold milk
- 200ml (just over 3/4 cup) cream
- 2 bay leaves
- 1 clove garlic
- 3-4 whole cloves
- 6 peppercorns
- 2 tablespoons butter
- 1 onion, finely chopped
- 1 cup fresh white breadcrumbs
Method
Heat milk and cream in a pot with bay leaves, ground cloves and peppercorns over a low heat.
Heat butter in a frying pan, add onion and cook over a low heat until softened but not brown.
Sieve the milk over the onions, discarding the leaves, garlic and peppercorns. Add the white breadcrumbs and cook stirring for 5 minutes. Serve hot.
