Cranberry, Bacon and Avocado Salad

Ingredients

  • 3 handfuls baby spinach
  • 1 handful rocket
  • 6 rashers streaky bacon
  • ¼ cup pinenuts, toasted
  • ½ cup Ocean Spray® Craisins® sweetened dried cranberies
  • 2 spring onions, sliced
  • 1 avocado, roughly diced
  • 2 teaspoons red wine vinegar
  • 1/3 cup olive oil

Method

Place salad leaves in a wide, shallow bowl or on a platter. Grill or panfry bacon until crispy, chop into pieces and add to salad. Toss pinenuts, craisins®, spring onion and avocado through leaves. Mix red wine vinegar with olive oil, drizzle over salad and serve with some crusty bread!
