Ingredients
- 80g chicken flavoured potato chips
- 1 cup dry breadcrumbs
- 1 tablespoon finely choped parsley
- 1/4 cup grated parmesan cheese
- 1-2 eggs
- 8 chicken drumsticks
Method
Preheat oven to 180°C. Crush chips and place in a shallow dish along with breadcrumbs, parsley and parmesan cheese.
Break the eggs into a separate shallow dish and mix with a fork. Dip chicken into the egg and then into the chip/crumb mix.
Arrange the chicken in a single layer in a roasting dish and cook for 45 until chicken is thoroughly cooked. The juices should run clear when pierced with a skewer.
TIP: You can also use plain chips and add chicken stock to the mixture or leave the coating without flavour
